Peach Cake Recipe
Preparation time: 45 minutes

Peach Cake Ingredients
- 2-3 ripe peaches
- 60 g of butter
- 200 g of sugar
- 140 g of yogurt
- 180 g of self-rising flour
- 2 eggs
- 1 tbsp vanilla essence
Ingredients for the candy
- 60 g of brown sugar
- 60 g of butter
- 1/4 tsp. cinnamon powder
Execute Recipe
- Preheat the oven to 175 °C fan.
- Wash the peaches well and cut them into slices half a centimeter thick, keeping their skin.
- Heat a non-stick pan over medium heat and add the butter, brown sugar and cinnamon.
- Mix well with a silicone spatula for a few minutes until the sugar melts and you get a nice caramel.
- Add the peach slices to the caramel, mix lightly so that the caramel goes everywhere and remove the pan from the heat.
- Let the peaches with the caramel cool for a while and proceed with the cake mixture.
- Beat the butter together with the sugar in the bowl of the mixer for a few minutes, until it becomes fluffy.
- Add the yogurt, while continuing to beat, the vanilla essence and the eggs one by one.
- Add the flour and mix gently for a while until the peach cake mixture is homogeneous.
- In a 24-26 cm form with a ring or in a round pan of the same size, arrange the peaches in a circle and pour over them with the caramel we have prepared. If we use a mold with a ring, we place it inside another pan so that caramel does not come out from the side and dirty our oven.
- Pour the cake mixture over the peaches and bake for about 25-30 minutes.
- Check with a toothpick or a sharp knife if the cake is cooked. We pierce it in the center and if it comes out dry then the peach cake is ready, otherwise we bake it for another 5 minutes.
- Remove the Peach Cake from the oven and wait for it to cool well before turning it over.
- We enjoy the summer Peach Cake plain or with vanilla ice cream.
