Usually most banana cakes are more moist and don’t rise much and I was looking for a recipe for a really fluffy banana cake. So after various tests I came up with the following recipe and it’s worth a try!
Recipe for Fluffy Banana Cake
Preparation time: 60 minutes
Portions: 8-10
Recipe ingredients
- 3 medium or 2 large ripe bananas
- 200 g of all-purpose flour
- 200 g of sugar
- 60 ml sunflower or corn oil
- 2 eggs
- 1-2 tbsp. vanilla essence
- 1 tbsp baking powder
- 1/2 tsp. baking soda
- 1 pinch of salt
- 1/2 tsp. cinnamon (optional)
Execute Recipe
- Preheat the oven to 160 °C.
- Peel the bananas and place them in a large bowl.
- Mash them well with a large fork so that there are no pieces. For the fluffiest banana cake, we can melt them in a blender.
- Add sugar, eggs, vanilla, oil to the bananas and mix well with a fork or wire whisk.
- In another large bowl, add the flour, baking powder, baking soda, cinnamon and salt.
- Mix all the dry ingredients with a spoon and pour them into the banana mixture.
- With a spatula, mix the mixture for the banana cake.
- Grease a 25 cm rectangular mold and pour all the mixture.
- Bake the banana cake in a preheated oven for 45-55 minutes, until it gets a golden color on the outside and is cooked on the inside. We check it by piercing it in the center with a stick or a knife and if it comes out clean it is ready, while if it has sticky dough, bake it a little longer.
- We wait 30 minutes before unmolding the banana cake.
- We enjoy the fluffiest banana cake at all hours of the day!
