Recipe for Roasted Liver with Chimichurri Sauce

Recipe ingredients
- 1 large piece of beef liver, deboned
- 1/2 bunch of parsley
- 1/2 bunch fresh coriander
- 1 medium dry onion
- 3 cloves of garlic
- 120 ml olive oil
- 1 teaspoon green tabasco
- juice of one lemon
- salt
- pepper
Execute Recipe
- Put the parsley, coriander, peeled onion, peeled garlic cloves, olive oil, lemon juice, green Tabasco, a pinch of salt and some pepper in a multi-cutter and beat well.
- Taste and if you want the chimichurri sauce hotter, add additional green pepper sauce.
- Wash the liver and dry it well with kitchen paper.
- Heat a grill pan or barbecue to medium-high heat.
- Lightly season the liver with salt and pepper and bake it for a few minutes so that it remains juicy in the center.
- Tip: once the liver is cooked, let it rest for 5 minutes to retain its juices
- With a sharp knife, cut the liver into thin slices.
- Serve the roasted liver with the chimichurri sauce and enjoy while it’s hot.
