Recipe ingredients

  • 1 duck fillet with skin
  • 125 g of fresh raspberries
  • 1 medium orange
  • 1 cup corn flour
  • Salt
  • Pepper

Execute Recipe

  1. Wash and dry the duck fillet well.
  2. We dry it well with kitchen paper and with a very sharp knife we ​​cut its skin into small squares.
  3. Add salt and freshly ground pepper and gently massage the fillet.
  4. Place the duck fillet in a cold pan, skin side down, then heat the pan over medium-high heat.
  5. Bake the duck for 4-5 minutes or until the skin is crispy and has a nice color.
  6. Turn the duck fillet on the other side and remove the pan from the heat.
  7. Leave the duck in the pan for 15 minutes to slow cook and rest at the same time.
  8. At the same time, in a small pot, add the juice from the orange with a pinch of salt.
  9. Keep aside 3-4 raspberries for serving and add the rest to the pot.
  10. Beat the mixture with a blender and wait for it to boil for 1 minute.
  11. Dissolve the cornflour in a bowl with 2 cups of water and add it to the raspberry sauce.
  12. Stir constantly for a few seconds until the sauce thickens and remove from the heat.
  13. Cut the duck fillet into thick slices and place it on a plate.
  14. Serve the duck fillet with raspberry sauce along with some fresh raspberries.
