Recipe for Grilled Chicken with Roasted Vegetables and Flavored Yogurt

Recipe ingredients

  • 2 chicken breasts
  • 1/2 tsp smoked paprika
  • 1/2 clove of melted garlic
  • 1/2 tsp turmeric powder
  • 2 tbsp olive oil
  • Salt
  • Pepper

Ingredients for the roasted vegetables:

  • 4 small organic carrots
  • 4-6 green onions
  • 1 tsp mustard
  • 2 tsp lime or lemon juice
  • 4 tbsp olive oil
  • Salt
  • Pepper

Ingredients for the flavored yogurt:

  • 500 g 2% strained yogurt
  • 1 handful of chives
  • 1-2 cloves of garlic
  • 2 tbsp olive oil
  • 2 limes or lemons
  • 1 handful of coriander
  • A little hot horn pepper for the dip
  • Salt
  • Pepper

 

Execute Recipe

  1. Heat the bbq to maximum for 10′ with the lid closed, until it reaches 300 °C or more.
  2. Wash all the vegetables well and cut the carrots in half lengthwise.
  3. In a large basin, mix olive oil with lime juice, mustard and add a little salt and pepper.
  4. Put the vegetables in the basin and mix them lightly so that they are well oiled.
  5. First, add the carrots to the barbecue grill, with their inner part down, and roast them for a total of 14-18 minutes, until they take on a bright color and soften slightly.
  6. At the same time, oil the chickens and add to both sides the mixture of garlic powder, turmeric, smoked paprika, a little salt and pepper.
  7. Add the chicken to the grill and cook over high heat for about 6-8 minutes on each side or until it reaches 80 °C on the inside.
  8. At the end, add the fresh onions and cook them for about 4-5 minutes, until they blacken on the outside and acquire that wonderful smoky aroma, but at the same time remain juicy and sweet on the inside.
  9. While the vegetables and chicken are cooked, prepare the aromatic yogurt.
  10. In a small multi-cutter or blender, put the chives, coriander, garlic, olive oil, pepper, a little salt and pepper and beat well.
  11. Then add the yogurt and continue beating until you get a nice cream.
