Recipe for Salt-Crusted Fish
Preparation time: 40 minutes
Portions: 3
Recipe ingredients
- 3 sea bass of approximately 500-600 g
- 1,000 g coarse salt
- 400 g normal salt
- 4 egg whites
- Lemon Tree
- Parsley
- Salt
- Pepper
Execute Recipe
- We clean the sea bass, wash them and wipe them with absorbent paper.
- Cut the lemon into thin slices and the parsley into large pieces.
- We fill their bellies with some parsley, salt, pepper and lemon slices.
- In a large bowl, mix well the two types of salt together with the egg whites. If the mixture is too wet we can add a little extra coarse salt so that the mixture can stand on top of the fish.
- Spread some of the salt mixture on a pan and place the fish on top, without touching each other. We can bake them separately in smaller pans.
- Cover the fish completely with all the salt mixture so that when the salt is cooked it shields the fish and keeps all the moisture inside.
- Bake the fish in a salt crust in a preheated oven at 190 °C for 25 minutes.
- Remove the baked fish from the oven and let it rest for another 5 minutes before opening it.
- With the back of a knife, break the salt crust and remove it without damaging the fish.
- Carefully remove the skin so that salt does not fall from the crust onto the cold.
- Remove the fillets and serve them together with boiled vegetables and a little lemon.
- When you try it you will find out how delicious the salt crusted fish is!
