This recipe for Chickpeas with Brown Rice is very tasty and easy to make.
I use the brown rice which stands out in taste and is very healthy. You can enjoy this recipe on its own or as a separate side dish for your meat or fish.
Recipe for Chickpeas with Brown Rice

Recipe ingredients
- 1 cup brown rice
- 2-2.5 cups chicken or vegetable stock
- 1 cup soaked chickpeas
- 2 medium onions
- 2 spoons of olive oil
- salt
- pepper
Execute Recipe
- From the previous day, soak the chickpeas in enough water to soften them. Optionally, we can add a small spoonful of soda powder.
- The next day, rinse them well and boil them in plenty of water until they soften. The time varies each time and depends on how quickly or not the chickpeas boil.
- As soon as they are ready, strain them and leave them in the strainer because we will need them later for the recipe.
- Pour the olive oil into a saucepan, heat it at medium to high temperature and add the chopped onions.
- Sauté them for a few minutes, until they are soft, without taking on a strong color, and then add the brown rice.
- Stir constantly for a few minutes, then pour in 2 cups of the stock.
- As soon as it comes to a boil, lower the heat enough, cover with the lid and boil for 20 minutes.
- Check if the rice and other broth are needed and then add the boiled chickpeas.
- Remove from the heat and leave the rice covered for 5 minutes before serving.
- Tip: you can add raisins and nuts to the rice.
- We serve the Brown Rice with Chickpeas on its own or with some yogurt.
