Recipe for Spaghetti with Crabs

Recipe ingredients
- 8-10 crabs
- 500 g of spaghetti
- 3 ripe tomatoes
- 1 dry onion
- some fresh parsley
- 2 cloves of garlic
- 5-6 drops of tabasco
- olive oil
- salt
- pepper
- sugar
Execute Recipe
- Wash the crabs and boil them for 20 minutes in water with a little salt and parsley.
- Tip: we choose the female crabs because they have more hair than the males. Ask your fisherman for them or see the difference in the photo below! Females are on the right.
- Remove the foam they produce with a slotted spoon and as soon as they boil, strain them and keep their broth.
- For the sauce, chop the onion and sauté it with a little olive oil in a saucepan, until it softens. After a few minutes, add the mashed garlic and continue sautéing for another 2 minutes.
- Then grate the tomatoes and add them to the sauce along with some salt, pepper, half a teaspoon of sugar and tabasco. Add half a cup of the broth and simmer for 10 minutes.
- At the end, add the boiled crabs to the tomato sauce, boil for another 5 minutes and remove them again to a plate.
- At the same time, heat 2 cups of the crab stock together with enough water and a little salt and boil the spaghetti for 2 minutes less than the manufacturer’s instructions.
- Strain them and add them to the simmering tomato sauce, stirring constantly. Boil for 2 minutes and if we see that they need extra moisture, we add a little more broth from the crabs to keep our sauce juicy.
- Serve the spaghetti with crabs hot immediately and garnish with chopped chives.
- We can clean the fat from all the crabs and add it to our spaghetti or serve the pasta with the crabs. For convenience, cut the crabs in half with a large knife.
