Recipe for Lentils with Rice and Caramelized Onions

Recipe ingredients
- 1/2 cup black beluga lentils or brown lentils
- 1 cup brown rice
- 2.5 cups of water
- 2 spoons of olive oil
- 1 sharp teaspoon of salt
- 2 large onions
- 1/4 cup olive oil
- 1 spoon of thyme honey
Execute Recipe
- In a medium saucepan, add water, salt and 2 tablespoons of olive oil. As soon as it boils, add the black lentils, the brown rice and lower the temperature enough.
- Cover the pot and simmer for 40-45 minutes. Remove the pot from the stove and leave the pot with the lid closed for another 5 minutes.
- At the same time, while the lentils are boiling, we proceed with the caramelized onions.
- In a non-stick pan, add 1/4 cup of olive oil and heat to a medium temperature.
- Clean the onions, cut them into slices and add them to the pan. Cook them for 20-25 minutes, stirring regularly, until they take on color and caramelize. At the end, add the honey and mix lightly for another 5 minutes.
- To serve, mix the brown rice with the lentils and serve on a plate, adding the caramelized onions on top.
- Lentils with Rice and Caramelized Onions can be eaten hot or at room temperature.
