Recipe for Fried Calamari with Basil Pesto, Serrano Ham, and Fried Egg

- 500 g small squids or squid roe
- 2 eggs
- 4 slices of serrano ham or prosciutto
- 1 cup all-purpose flour
- grated Parmesan

Execute Recipe
- If the squids are fresh, clean them, wash them, and place them in a colander.
- Alternatively, we can use frozen squids that have been cleaned and as soon as they thaw, we wash them well and place them again in a colander to drain.
- Salt them lightly and let them drain well.
- Add enough oil to a pan or a pot and wait for it to heat up well.
- At the same time, in a large container, add the flour together with 1 tsp of salt, a little pepper, and mix.
- Flour the calamari, shake off the extra flour and drop them in portions into the hot oil, which must cover the calamari to fry them properly and evenly.
- When they turn brown and get a nice color, remove them with a slotted spoon and place them in a container with absorbent paper.
- Heat a large pan, add some olive oil, and fry 2 eggs.
- Divide the fried calamari into two deep plates and add 2 slices of serrano ham, the fried egg, a few spoonfuls of basil pesto, and grated Parmesan to each one.
- We serve the Fried Squid with Basil Pesto, Serrano Ham, and Fried Egg hot with some freshly ground pepper.
