This Shrimp Caesar Salad recipe is truly special.
The difference from the classic Caesar salad is made with shrimp and the whole fresh vegetables of Freskoulis! The result is a lighter and finer salad that can comfortably stand as a separate dish on any occasion.
Recipe for Caesar Salad with Shrimp

Recipe ingredients
- 2 packs of Fresh Pandaisia Salad
- 8 large fresh prawns
- 100 g parmesan flakes
- 2 tbsp croutons
- 1 tbsp olive oil
- salt
- pepper
Ingredients for Caesar Dressing:
- 1 egg yolk
- 1/4 tsp Dijon mustard
- 1 tsp lemon juice
- 75ml olive oil
- 30 g of grated parmesan
- 1/2 clove garlic, melted (optional)
- 1 pinch of salt
- some freshly ground pepper
- 2 tbsp water
Execute Recipe
- Place the egg yolk with the mustard, garlic, and lemon juice in a bowl and beat with a whisk until a smooth and uniform mixture is obtained.
- Slowly pour the olive oil into the mixture, beating continuously until the Caesar salad dressing is homogenized and has a mayonnaise-like appearance.
- Add the salt, some freshly ground pepper, and the Parmesan cheese and mix lightly.
- At the end, add 2 cts of water and mix to obtain a lighter texture in the dressing.
- Clean the shrimp and place the tails in a small dish.
- Add 1 tbsp of olive oil, a little salt, and pepper to the shrimp.
- Heat a small pan over medium-high heat and sauté the shrimp for less than half a minute on each side.
- Remove the shrimps from the pan and place them on a plate to cool a little until we prepare the Caesar with shrimps.
- Pour the two Pandaisia salads into a large bowl, add the dressing, and mix the Caesar Salad very well with gentle movements.
- Place the croutons, parmesan flakes, and finally the shrimp on top.
- We accompany the Caesar Salad with shrimp with a drink.
